Ultimate Blue Cheese Bacon Burger

The Ultimate Blue Cheese Bacon Burger is much more than just a Burger is a dream on a bun!

April is beer month in North Carolina, and nothing goes better with beer than a warm evening by the grill making up some amazing burgers! There is no shortage of burger recipes out there. There are so many ways to make burgers, there are restaurants out there that actually specialize in making some of the best burgers around! Hodadies in San Diego CA, makes a burger bigger than your face! Seriously its that big. When I was living in the Hells Kitchen area of NYC I discovered a place that only served burgers, and by burgers I don’t mean just a couple, there menu had like 100 different burgers on it! The did also serve Milk Shakes, Fries and Onion Rings. Sadly I have forgotten the name of the place so if you know it, please use the comments below so I can include it and make a visit on my next trip to DC.

Ever since I moved out of NYC I have searched for a place that had burgers as awesome, but I have come up short. The closest place I have found in my neck of the woods is Bull City Burgers & Brewery, which I’ll be doing a post that includes a behind the scenes tour of the brewery soon! The problem with Bull City Burgers is that while the burgers may be awesome they don’t have 100+ burgers on the menu! I had found an absolutely awesome burger at Sake Bomb, that was a Kobe Beef Burger with Shiitake Mushrooms and Shallots that was to die for, but apparently not many people go to sushi places for burgers so they took it off the menu!

I am lucky here in Durham we have a countless number of options for getting good burgers to go with our beer, even if none of them live up to that place I can’t remember the name of in NYC. The problem is in other parts of the country people have to settle for either fast food, so low budget greasy spoon burger, or even worse a nasty Applebee’s burger! That’s where this recipe comes into play! If you want an awesome gourmet style burger at home look no further because you have stumbled upon the key to burger paradise!

It is best described by the staff of Yo Gabba Gabba as a Party In My Tummy! So Yummy! So Yummy!

Making a great meal is about using great ingredients. Don’t settle for ingredients that are not fresh. Find a butcher in town and get fresh ground beef & bacon, make your buns at home, and use the freshest veggies.

Ultimate Blue Cheese Bacon Burgers

This bacon blue cheese burger combines salty blue cheese, bacon, sweet caramelized onions, sauté’d Crimini Mushrooms, and Avocado.

  • 2 lbs Fresh Ground Sirloin at least 90/10
  • 1 tbsp Onion Powder
  • 1 tsp Sea Salt
  • 1 tsp Fresh Ground Black Pepper
  • 2 oz Blue Cheese Crumbled
  • 4 Large Hamburger Buns Home Made is always best
  • 12 Slices thick-cut bacon cooked & drained. Preserve the grease if using a grill pan.
  • 6 oz Blue Cheese Crumbled
  • 2 Tbsp Olive Oil
  • 2 large Shallots thinly sliced
  • 1 Ripe Avocado
  • 6 oz sliced Crimini Mushrooms aka baby bellas
  1. Heat the olive oil in a large, heavy-bottom sauce pan on medium heat. Once its hot add the sliced shallots, stir briefly to coat with oil and cook for about 10 minutes. Proceed to making the burger mixture, Step #5 – #7, while the onions cook.

  2. Flip the onions and cook for an additional 10 minutes.

  3. Flip one last time and add the sliced Crimini mushrooms to the pan. Lower the heat to medium-low and allow mushrooms to cook. Proceed to grilling, Step #8 – #9, while the onions & mushrooms finish cooking.

  4. Once the mushrooms are fully cooked, remove the mixture and top the burgers with them, if you timed it right those should be ready right when the mushrooms are!

  5. In a large bowl, mix ground sirloin, onion powder, salt, pepper and a small amount of the Blue Cheese about 2 oz until just combined. Do not overmix, or your patties will be tough and those eating your burgers will be eating something similar in texture to rubber.

  6. Form the burgers into 4 patties, or if you have kids in the house 2 large patties for the adults and 4 slider size patties.

  7. Let the patties rest for about five minutes at room temperature, as you heat up the grill. If using a grill pan put about 1 tbls of the preserved bacon grease in the pan. If you’re not using an actual grill or a grill pan, than go to the store and buy either a grill or a grill pan.

  8. Cook the burgers until the crust forms on the bottom of the burger -about 2 minutes-. Do not flip until it gets to this point! When the burgers lift up easily, flip, and add enough blue cheese to cover the burger completely. Close the lid of the grill, and cook for another 2 – 3 minutes for medium rare burgers. Don’t ruin this awesome burger by making it well done!

  9. Toast your buns for about 30 seconds per side, and then carefully transfer the burgers to the buns.

  10. Top burgers with caramelized shallots, bacon, mushrooms, and avocado!

  11. Serve immediately with homemade fries, or onion rings and a pint of porter or brown ale.
