It can be hard to start your day off right. We all know breakfast is the most important meal of the day, and yet so many of us settle for just a cup of coffee. The hero of this dish is a poached egg, and while directions are included on how to poach an egg in this recipe if you have never done it before it is worth checking out my video post that includes some tips and tricks.
Another awesome dish for Brunch! If you like Avocado this dish is a must try. From kitchen to table to cooking time is only about 10 minutes. The great flavors and quick cook time make it a perfect option for the late riser.
- 2 Slices Sourdough Bread
- 2 tsp Flaked Almonds
- 2 Large Eggs Duck Eggs are best
- Fresh Ground Black Pepper
- Sea Salt
- Dried Chili Flakes
- 5 Semi-Dried Cherry Tomatoes
- 1 Medium Ripe Avocado
- 1 Small Orange
Peel the orange and break into segments, removing any seeds and as much pitch as possible. Chop segments into small pieces and place in bowl with any juice.
Halve, the avocado, then remove the pit and peel off the skin. Roughly chop, the add to the bowl with the orange along with the cherry tomatoes, chili-flakes. Season with sea salt and pepper. Stir to combine and set aside.
Poach the eggs in bowling water for 3 minutes.
Meanwhile toast the almonds in a dry frying pan over medium heat until golden brown. Remove almonds and toast each side of bread the place on serving plate.
Divide the avocado mixture over slices of bread. Scatter toasted almonds over mixture. Place poached Egg on each slice, season to taste with pepper. Serve immediately.
