Rosemary & Bacon Mushrooms

Mushrooms are one of my all time favorite things to cook with. What better way to express the wonders of food than turning a fungus into something wonderful and tasty. These mushrooms are great as a stand alone side dish, or make the perfect topper for that steak and burgers that just came off the grill!

These mushrooms are great as a stand alone side dish, or make the perfect topper for that steak and burgers that just came off the grill!

Ingredients
  • 2 Slices Raw Thick Cut Bacon chopped
  • 1 tbsp Minced Shallots
  • 8 oz Sliced Portobello or Baby Bella Mushrooms
  • 1 Clove Garlic Minced
  • 2 Sprigs Fresh Rosemary Chopped
  • 1/2 tsp Fresh Ground Black Pepper
  • 1 tbsp Unsalted Butter
  • 3 tbsp White Wine
  • 1 tbsp Soy Sauce
Instructions
  1. Cook bacon and onion over medium high heat, in cast Iron Skillet, until fragrant and bacon is mostly cooked through.DO NOT DRAIN.

  2. Add butter to pan and melt. Add mushrooms, garlic, rosemary and pepper.

  3. Cook over medium high heat, stirring infrequently until juices are released and evaporate from mushrooms (About 6 minutes).

  4. Add in white wine and soy sauce. Turn up heat to high for about 1 minute.

  5. Serve hot as side dish or over steak.
