Miso Noodle Soup w/ Poached Egg

Making the poached egg in this dish is the hardest part, and while directions are included on how to poach an egg in this recipe if you have never done it before it is worth checking out my video post that includes some tips and tricks.

Miso Noodle Soup W/ Poached Egg

A quick 10-minute soup perfect for a quick lunch.

Ingredients

  • Green Onions
  • Spinach
  • Salt & Pepper
  • Soy Sauce
  • Large Egg
  • Portobello Mushrooms
  • Shiitake Mushrooms
  • Salt & Pepper
  • Fresh Ginger
  • Water
  • Miso Paste

Instructions

  1. Bring medium pot of water to gentle boil. Add miso paste, and flavor with soy sauce, pepper, and freshly grated ginger. Add shiitake mushrooms.

  2. Stir water with whisk causing broth to vortex in pot. Add cracked egg and poach for 2 - 3 minutes.

  3. In serving bowl place sliced portobello mushrooms, layer with fresh medium pasta (will cook in broth), top with spinach leaves. Spoon broth over top, placed poached egg in middle. Season with green Onions and fresh ground black pepper. Let stand for 2 minutes and serve.

There are no quantities listed because it should be made to taste. Eyeball and adjust as needed.
