Baked Peaches & Cream is an amazing southern classic desert. When peaches are in season this makes for an absolutely amazing dish!

- 4 Fresh Southern Peaches
- 1 tsp Vanilla Extract
- Sprigs of Fresh Mint
- 1 Cup Mascarpone
- 1/2 Cup Heavy Cream
- Flaked Almonds
- Cinnamon & Suger
Preheat your oven to 350. Cut peaches in half and remove the pits. Place in cast iron skillet.
Place a pat of butter (about 1 Tablespoon) in the center of each peach and drizzle with honey.
Bake for 25 – 30 minutes.
While they are baking and browning, mix your cream, mascarpone, and vanilla extract. Lightly toast the almonds in a pan.
Place peaches on plate. Spoon remaining butter and honey from the pan over the peaches. Place a heaping spoonful of the mascarpone cream on each peach and top with almonds, cinnamon, sugar, and mint leaves. Place a few blueberries on the side in the cream.
